Thanksgiving is a week away and we wanted to share one of our family favorite appetizers- stuffed mushrooms! This appetizer is a hit every year- it's the first one to come out of the oven, and the first one to disappear. This recipe is very easy to make and takes only about 30 minutes total. One of our favorite wines to pair with this is Rancho Roble Barbera, because the herbaceous cheese flavors pair with the smooth light fruit-forward taste of the wine.
One of my favorite parts of this recipe (besides sneaking bites while mixing the filling), is that the filling can double as a dip if you have leftovers. Just pair with some veggies or crackers on the side to create a whole separate dip. The other great option with these mushrooms if that you can experiment with the toppings. We've used bacon, parsley, green onions to top at the end, and they all taste fantastic. You can change up the toppings based on you or your guests taste preferences.
